The Revival
In 2021, the Basiakos family decided to revive their neglected 10-acre olive tree field. After months of strenuous work, the olive trees were successfully pruned back to their former glory.
2022 harvest
By the end of 2022, the first olives had been harvested, and numerous workers gathered to hand-pick them in the traditional way. The olives were then packed into bags and transported to the olive oil mill. Daily extraction of the olive oil took place to ensure the highest quality. The state-of-the-art machinery at the Lymperis Estate mill utilized the cold extraction method to preserve the qualitative characteristics of the EVOO, maintaining its strong aroma and taste.



The Result.
In 2023 the family launched a limited edition bottle containing extra virgin olive oil from the first harvest in decades. Inspired by the rich history of the city of Thebes, the bottle features the Cadmea logo, a depiction of the Boeotian shield, a symbol of the Theban hegemony. The letter “d” has been replaced with the Greek letter “δ” (delta) to emphasize its Greek origin.
